  • 1 shallot, peeled and quartered
  • 1/4 C. The Olive Tap’s Champagne Vinegar
  • 1/4 C. The Olive Tap’s 100% Extra Virgin Olive Oil (medium fruity: Castile, Mia’s Blend)
  • 1 T. Dijon Mustard
  • 3/4 t. salt
  • Freshly Ground Pepper, to taste

Directions:

Combine shallot, Champagne Vinegar, EVOO, mustard, salt and pepper in a blender. Puree until smooth.
