Cucumber and Red Onion Salad

This cucumber salad is the perfect accompaniment to a great summer meal. Great with seafood or some good old fashioned BBQ!
Ingredients:
- 2 seedless cucumbers, sliced
- 1 medium sized red onion, sliced thin
- 2 T. The Olive Tap’s Premium White Balsamic
- 2 T. The Olive Tap’s Lambrusco Wine Vinegar
- 2 T. The Olive Tap’s 100% Extra Virgin Olive Oil (your favorite)
- 1 t. honey
- 1/2 t. Granulated Garlic (or 1 clove garlic, finely minced)
- Salt to taste
Directions:
Place cucumber and onion slices into a large bowl. In a separate bowl whisk together Lambrusco, White Balsamic, Extra Virgin Olive Oil, garlic, and salt. Pour over cucumber and onions, and toss. You can eat it immediately, but I like to cover it with plastic wrap and refrigerate for about an hour for all of the flavors to come together.
