Fresh Grilled Corn Salad
Ingredients:
4 ears fresh sweet corn, remove husks and silk ( or equal to about 4-5 cups of corn)
3 Tbsp The Olive Tap’s Jalapeño Olive Oil (or Spicy Green Chili Olive Oil), plus more for brushing on corn
Juice of 1 lime
1/2 teaspoon The Olive Tap’s Mexican Street Corn Seasoning (or to your taste)
1/3 cup sliced & chopped red onion
1/2 cup crumbled Cotija, or feta cheese, plus more for garnish
1/4 cup finely chopped fresh cilantro, plus more for garnish
Directions:
Preheat grill to medium-high heat. Brush the corn with the Jalapeno Olive Oil and grill, turning occasionally, until lightly charred on all sides. Let the corn cool slightly, then cut the kernels off the cobs into a large bowl. Add the Jalapeño Olive Oil, lime juice, Mexican Street Corn Seasoning, red onion, cotija cheese, and cilantro to the bowl. Toss to until everything is well combined. Taste and adjust the seasoning if needed. Garnish with additional cheese and cilantro.
