Grilled Scallop Skewers with Blood Orange Marinade
Grilled scallop skewers with a refreshing citrus marinade!
Ingredients:
2 T. Minced Scallions
1 Clove Garlic
1/4 C. The Olive Tap’s Blood Orange Olive Oil
1/4 t. Pepper
1 lb. Scallops
1 Large Sweet Onion (cut into quarters, then sliced in half)
1 Red Sweet Pepper
Directions:
Combine scallions, garlic, Blood Orange Olive Oil and black pepper in a large glass bowl. Add scallops to bowl and marinade for 30 minutes. Thread scallops, onion, pepper on four skewers and grill over medium heat for 8 minutes. Baste with marinade and turn several times during cooking.
