6-8 large potatoes–pick your favorite variety
Freshly ground black pepper
1/2 cup Garlic Olive Oil from The Olive Tap
Italiano Extra Virgin Olive Oil from The Olive Tap
Boil the potatoes until done (or for about 1/2 hour after the water begins to boil). Peel and mash the potatoes, leaving them a little bit lumpy.
Add Garlic Olive Oil and pepper and mix with a wooden spoon to desired consistency. Finish with Italiano and hot water if the potatoes are dry.
