
Pasta Primavera with Caramelized Onions
Pasta with caramelized veggies and pesto...sure to please!
Ingredients:
Extra Virgin Olive Oil
Garlic olive oil
Basil olive oil
4 onions sliced
2 red bell peppers, sliced
2 green bell peppers, sliced
4 zucchini, sliced
Your favorite pasta
16 oz Pesto Genovese
Shaved Parmigiano Reggiano or Grana Padano
Directions:
Mix the olive oils to your taste then heat in a skillet and caramelize the onions, peppers and zucchini. Meanwhile put the pasta in a pot of boiling water and cook al’dente. Drain the pasta and return to the pot. Add the onions, peppers and zucchini with their oil and toss. Add the pesto and continue to toss. Serve with a bit of cheese.
