Riserva Caprese Cabobs
Ingredients:
- Fresh mozzarella cheese (1/2″ balls or cubes)
- Ripe grape tomatoes or cherry tomatoes
- Fresh basil leaves
- Skewers
- The Olive Tap’s Aceto Balsamico di Modena, Riserva*
- The Olive Tap’s 100% Extra Virgin Olive Oil (your favorite)**
- Salt to taste
*may substitute Sicilian Lemon, Aceto 4, Fig

Directions:
Take fresh mozzarella cheese (1/2″ balls or cubes), ripe grape or cherry tomatoes and fresh basil leaves. Alternately spear cheese, tomatoes and basil on skewers. On a decorative platter, drizzle Aceto Balsamico Riserva. Arrange skewers on the platter. Drizzle kabobs with The Olive Tap 100% EVOO of your choice and a touch more of Riserva and a sprinkle of sea salt. Serve immediately.

Take your Cabobs to a scary level by using Halloween Food Molds for the fresh mozzarella and drizzle the cabobs with fresh “balsamic vinegar blood” using our Aceto Balsamic di Modena, Riserva. Deadly delicious!
Preparing the Mozzarella Skulls or Food Mold of Choice:
- Add your fresh mozzarella cheese to Halloween Silicone Food Molds (Shop Halloween Silicone Molds – ensure they are bakeable).
- Press the appropriate size chunk of mozzarella into the mold. Add the filled mold to a baking dish and bake on 350 F for 5-8 minutes (vary time by size of the mold) or until they are melted just enough to form into the mold.
- Once the mozzarella is properly melted, let the mold cool for 5 minutes and then refrigerate for 5-10 minutes.
- Continue the assembly and follow the recipe instructions as directed in our Riserva Caprese Cabobs Recipe including drizzling the cabobs with our Aceto Balsamic di Modena Riserva!
