Roasted Garlic Hummus
Ingredients:
1 15-ounce can chickpeas drained, reserve liquid
1/4 cup Tahini sesame paste
1/4 cup freshly squeezed lemon juice
2 garlic cloves
1/2 teaspoon ground cumin
salt to taste
2 tablespoons The Olive Tap’s Roasted Garlic Olive Oil, plus more for drizzling
The Olive Tap’s Sweet Smoked Spanish Paprika for garnish
Directions:
Add lemon juice, tahini, and garlic to a food processor and blend until smooth. Add the chickpeas, salt and cumin to the food processor and blend while slowly adding the Roasted Garlic Olive Oil until the mixture is smooth. Add the reserved chickpea liquid, one tablespoon at a time, until the hummus is smooth and reaches your desired consistency.
Transfer to serving bowl and drizzle with a little olive oil and sprinkle with the paprika to garnish.
Enjoy with pita, crackers, veggies!
