Tilapia in Vinaigrette
Tilapia with a herb wine vinaigrette!
Ingredients:
- 2 or 3 pounds Tilapia fillets
- Flour
- Salt
- 2 large onions, sliced thin
- 1/2 cup The Olive Tap’s Sorrento Lemon Olive Oil
- 1 tbsp lemon zest
- 3/4 cup The Olive Tap’s Champagne Vinegar
- 1 tsp oregano
- 2 tsps dry mustard
- Handful of Chopped Parsley
- 1/2 tsp ground coriander
- 1/4 cup dry white wine
Directions:
Dredge fish fillets in flour and a little salt. Place in baking dish.
Saute onions in Lemon Oil.
Spread onions over fillets.
Wisk together the Lemon Oil, lemon zest, Champagne Vinegar, garlic, oregano, mustard, parsley, coriander, and wine.
Pour the dressing over the fish.
Bake uncovered in a 350 oven for 45 minutes.
