Chris’s Panzanella with Beans
A delicious Panzanella salad with the addition of fresh garbanzo beans and feta cheese!
Ingredients:
1/4 tsp. salt
1/2 tbsp. Olive Tap Red Wine Vinegar
2 tbsp. Olive Tap Extra Virgin Olive Oil
1/4 tsp. pepper
1 tbsp. Olive Tap Garlic Olive Oil
2 cups chopped tomatoes
1 cups chopped cucumber
1/2 cup chopped green pepper
1/4 cup chopped red onion
15 oz. garbanzo beans
4 cups toasted bread, cubed
1/2 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/2 cup crumbled Feta cheese
Directions:
Combine first 5 ingredients in a large bowl. Add tomatoes, cucumber, green pepper, and red onion. Toss and let marinate for 2 hours. Add remaining ingredients just before serving.
